About the Wine: The Knights Valley AVA is the warmest region in Sonoma as it sits between the Mayacamas and Mount St Helena, resulting in a great environment for Bordeaux varietals. The elevation keeps the nights cool which helps retain acidity and keep the wines balanced. It’s known as being one of the last, remote corners of Sonoma County that’s undeveloped, however there are over 2,000 acres of vineyards planted. This is the first time we’ve sourced fruit from Knights View Vineyard. The 2021 harvest started a few weeks earlier than normal. In general, yields were low due to the ongoing drought in CA, but quality was high and we saw a great concentration of flavors in the fruit. Once the fruit arrived in Oceanside, we destemmed and processed it here on site. The grape then fermented for about 2 weeks. After pressing, the wine was aged for 20 months in 25% new French Oak and 75% once used French Oak before being bottled in August 2023.
Tasting Notes: The aroma is intensely fruity, with an enticing bouquet of ripe blackberries, juicy plums, and cassis. Subtle notes of fresh mint and a hint of violet add an aromatic lift, while a touch of cedar and vanilla hints at the influence of oak.
Food Pairings: Herb or garlic roasted chicken offers a nice balance to the wine’s fruitiness. A hearty lasagna with layers of either meat or roasted vegetables would be a great match.
