About the Wine: The Pine Mountain-Cloverdale Peak is one of the newly designated AVA’s in California, located 30 minutes north of Healdsburg. We source this Cab Sauv from Pine Mountain Vineyard, a 36 acre family owned vineyard that is perched between 2,200 and 2,800 ft of elevation. This defining characteristic of high elevation leads to cooler daytime & warmer night time temperatures, longer sunlight hours and cooling oceanic breezes. With these unique features, we received our fruit later into the growing season (typical of high elevation vineyards) and that was intense in flavor and color. Once the fruit arrived in Oceanside, we destemmed and processed it here on site. The grapes were then fermented, pressed and then barreled in a mix of once-used French oak and new French oak. After 24 months, we bottled the wine in January 2022.
Tasting Notes: Experience notes of blackcurrant and Maraschino cherry, with secondary aromas of vanilla, cedar and flint. Dark, brooding tannins make this a perfect Fall wine!
Food Pairings: Pair with beef or lamb based dishes - try an authentic German Sauerbraten, a tender beef roast with a long marination, or herb-crusted roast lamb. Baked eggplant would also be a great pairing.
