About the Wine: We’ve been sourcing Cabernet Franc from Windsor Oaks Vineyards as far back as 2015 and love to show it off as a 100% Cab Franc wine. The vineyard is located in the Chalk Hill AVA, which is in the northeastern corner of the larger Russian River Valley. Chalk Hill is named after its volcanically-derived, chalky white ash soils, and is known for its warmer temperatures. Once the fruit arrived in Solana Beach, we destemmed and processed it here on site. The grapes then fermented in picking bins for 2 weeks. After pressing, the wines were aged for 20 months in 20% New French Oak and 80% once used French Oak before being bottled in September 2021.
Tasting Notes: Our 100% Cabernet Franc expresses delicious notes of red fruits such as ripe raspberries, strawberries and red plum. It has a peppery finish with classic hints of green bell pepper and medium plus tannins. A well balanced wine that will leaving you wanting another sip!
Food Pairing: Key with Cab Franc is to match the herbs & spices - try our Herb Chevre or Purple Haze cheeses, lamb meatballs in tomato sauce, or roasted pork.
