About the wine: The Russian River Valley has a chactertiscally cool climate (thanks to the coastal fog!) which helps it produce some of the world’s best Chardonnays & Pinot Noirs. The fog contributes to a huge variation between high & low temperatures within the same day. The 2022 growing season was consistent & mild, with all signs leading to a great harvest. Then came an extended heat wave beginning in late August that divided the season into earlier & later picks. In both instances, we received lower yields than expected, but the fruit we received was very high quality, with strong structure and terroir-driven characteristics. Once the Chardonnay fruit arrived in the cellar, we pressed it here on-site. We received a lot of Chardonnay this year so we decided to use half of it for our 2022 Chardonnay and half for a sparkling wine. For the sparkling, we fermented the wine in stainless steel before sending it to South Coast Winery in Temecula where they completed the sparkling process in the Charmat Method. They pressurize the wine in a tank where they then add yeast and sugar which initiates the secondary fermentation (and creates the bubbles!). After, they filter the wine into another tank to remove the lees before the wine is bottled under pressure.
