The Pine Mountain-Cloverdale Peak is one of the newly designated AVA’s in California, located 30 minutes north of Healdsburg. We source this Cab Sauv from Pine Mountain Vineyard, a 36 acre family owned vineyard that is perched between 2,200 and 2,800 ft of elevation. This defining characteristic of high elevation leads to cooler daytime & warmer night time temperatures, longer sunlight hours and cooling oceanic breezes. The mountainous terrain is typically steep, with soil that is shallow to moderately deep, well drained and which contains large components of sand and gravel. With these unique features, we received our fruit later into the growing season (typical of high elevation vineyards) and that was intense in flavor and color.

Tasting Notes: On the nose, experience aromas of concentrated blackfruit and sweet cedar, coupled with tobacco. The palate expresses heavy velvety tannins, with a dry, vanilla finish. Wines were aged for 22 months in 25% new French Oak and 75% once used French Oak before bottling in September 2020.

Food Pairings: Pair with beef or lamb based dishes - try an authentic German Sauerbraten, a tender beef roast with a long marination, or herb-crusted roast lamb. Baked eggplant would also be a great pairing.
