The 2018 growing season was a dream for most vintners. A mild, steady summer with no heat-spikes allowed the fruit to mature evenly and stress-free. The fruit that we received was very high quality and in good quantities. Once the fruit arrived in Solana Beach, we destemmed and processed it here on site. The grapes then fermented in picking bins, where we fortified the wine with Brandy. As Brandy has such a high alcohol content, it kills all yeast activity which causes the fermentation to stop, meaning sugar is no longer converted into alcohol. The Brandy also raises the final alcohol level of the wine. The result is a perfect balance of sweetness and alcohol content. The wine is then aged for 4 years in French Oak before being bottled in February 2022.
